Red and fizzy PetNat from oldschool Prosecco master, Riccardo Zanotto. Dry, refreshing and fruity with sour cherries and raspberries as predominant flavours. Nice minerality and an almost earthy personality.

Vinification: Spontanous fermentation with a 6-8 days of maceration. No filtration, no clarification, no added sulpher. After the first fermentation the must is bottled and with the rising temperatures in the spring the second fermentation takes place directly in the bottle. No degorgement.
